Abstract

ABSTRACT Tantowi, Imam. 2024. Analysis of Culinary Business Management Strategy in an Islamic Economic Perspective (At the Salma Traditional Cake Shop in Tanjung Bumi District, Bangkalan Regency)., Economic Education Study Program. STKIP PGRI Bangkalan, Supervisor: Rusky, M. Pd This study aims to analyze the Business Management Strategy of Culinary Business in the Perspective of Islamic Economics at the Salma Traditional Cake Shop in Tanjung Bumi District. The research conducted is field research, using qualitative research. Qualitative research uses observation and interviews in data collection in the field, the data sources used are primary data and secondary data. The informants in this study amounted to 9 people, namely 1 owner and 8 employees of Salma Traditional Cake Shop. From the results of the study, it was found that the business management strategy of Salma Traditional Cake Shop includes 4 components, namely planning, organizing, actuating and controlling. Planning is carried out by producing Traditional Cakes according to orders so that they are not excessive so that the quality of Traditional Cakes is maintained and always new. Second, Organizing here in the form of employees who have been accepted will be given guidance first before working, such as being guided on how to make delicious and quality Traditional Cakes. Third, Actuating here is guiding every employee in carrying out every task, starting from working on time. Fourth, Controlling is in the form of directly supervising employees and reprimanding directly if mistakes are made by employees. The business management strategy is in accordance with Islamic economic principles with 3 pillars in the form of monotheism, sharia and morals. STKIP PGRI Bangkalan, Pembimbing: Rusky, M. Pd Penelitian ini bertujuan untuk menganalisis Strategi Manajemen Bisnis Usaha Kuliner dalam Perspektif Ekonomi Islam pada Toko Kue Tradisional Salma di Kecamatan Tanjung Bumi. Penelitian yang dilakukan ini adalah penelitian lapangan (field research), dengan menggunakan penelitian kualitatif. Penelitian kualitatif menggunakan pengamatan dan wawancara dalam pengumpulan data di lapangan, sumber data yang dipakai berupa data primer dan data sekunder. Informan dalam penelitian ini berjumlah 9 orang yaitu 1 orang pemilik dan 8 orang karyawan Toko Kue Tradisional Salma. Dari hasil penelitian ditemukan bahwa Strategi manajemen bisnis Toko Kue Tradisional Salma meliputi 4 komponen, yaitu planning, organizing, actuating dan controlling. Planning yang dilakukan dengan memproduksi Kue Tradisional sesuai dengan pesanan supaya tidak berlebihan sehingga kualitas kue Tradisional tetap terjaga dan selalu baru. Kedua, Organizing disini berupa Karyawan yang telah diterima akan diberi bimbingan terlebih dahulu sebelum bekerja, seperti dibimbing cara membuat Kue Tradisional yang enak dan terjaga kualitasnya. Ketiga, Actuating disini yaitu membimbing setiap karyawan dalam melakukan setiap tugasnya, mulai dari bekerja tepat waktu. Keempat, Controlling berupa mengawasi langsung karyawannya dan menegur langsung apabila terjadi kesalahan yang dilakukan oleh karyawan. Strategi manajemen bisnis sesuai dengan prinsip ekonomi Islam dengan 3 pilar berupa tauhid, syariah dan akhlak. Kata Kunci : Strategi Manajemen, Bisnis Kuliner, Ekonomi Islam.
